Ingredients

  • 1 cup fresh blueberries
  • 1 cup cottage cheese
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • Cooking spray (for air frying)

Instructions

  1. Mix Wet Ingredients: In a mixing bowl, combine the cottage cheese, sugar, egg, and vanilla extract. Mix until the mixture is smooth.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until just combined; avoid over-mixing to keep the donut holes light.
  4. Add Blueberries: Gently fold in the fresh blueberries to the batter.
  5. Preheat Air Fryer: Preheat the air fryer to 350°F (175°C).
  6. Prepare Basket: Lightly coat the air fryer basket with cooking spray to prevent sticking.
  7. Form Donut Holes: Using a spoon, drop small amounts of the batter into the basket, leaving space between each donut hole for expansion.
  8. Air Fry: Air fry for 8-10 minutes, or until the donut holes are golden brown and cooked through.
  9. Cool and Serve: Remove from the air fryer and allow them to cool slightly before serving. Enjoy your delicious blueberry donut holes!

Notes

Substitutions: Greek yogurt can be used in place of cottage cheese. Add a dash of lemon zest to enhance blueberry flavor.
