A hearty and nourishing soup combining tender beef, fresh vegetables, and nutty barley, perfect for comfort on chilly days.

Ingredients

  • 1 lb beef stew meat (shoulder or chuck)
  • 1 cup barley (preferably pearl barley)
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups beef broth (homemade or store-bought)
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil (for browning the meat)

Instructions

  1. Sauté the Beef: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  2. Add the Vegetables: Stir in the diced onions, sliced carrots, sliced celery, and minced garlic. Cook until soft and fragrant, about 5-6 minutes.
  3. Combine the Ingredients: Add the barley, beef broth, and bay leaf to the pot. Stir well to combine.
  4. Bring to a Boil: Increase the heat and bring the mixture to a boil.
  5. Simmer: Reduce heat to low and let soup simmer uncovered for 1.5 to 2 hours.
  6. Season: Taste and season with salt and pepper to your liking.
  7. Finish Up: Remove the bay leaf before serving.

Notes

Use fresh herbs like thyme or rosemary for enhanced flavor. The beef can be substituted with chicken or a plant-based protein.
