A hearty and comforting beef stew, slow-cooked to perfection with tender beef and nutritious vegetables.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Brown the beef: In a skillet, heat olive oil over medium-high heat. Add the beef chunks in batches and brown on all sides. Once browned, transfer the beef to a slow cooker.
  2. Add vegetables: Place the diced potatoes, sliced carrots, chopped onion, and minced garlic into the slow cooker with the beef.
  3. Combine broth and seasoning: In a bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker.
  4. Cook: Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender and vegetables are cooked through.
  5. Add peas: In the last 30 minutes of cooking, stir in the peas.
  6. Serve: Enjoy your comforting beef stew warm in bowls, ideally with crusty bread or over rice.

Notes

For best results, cut vegetables into uniform sizes for even cooking. Taste before serving to adjust seasoning.
