Ingredients

  • 1 lb chicken (boneless, skinless thighs or breasts)
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, celery, onions, or your choice)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1-2 teaspoons dried herbs (such as thyme or basil)

Instructions

  1. Prepare the chicken by placing it at the bottom of the slow cooker.
  2. Add the chicken broth and mixed vegetables, diced tomatoes, and minced garlic.
  3. Season with salt, pepper, and herbs.
  4. Stir gently to combine all the ingredients.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds.
  6. Serve by removing the chicken, shredding it, and returning it to the soup.

Notes

For the most tender chicken, opt for thighs instead of breasts. You can customize the vegetables and seasonings based on preference.
