A delightful and healthy dish that transforms spaghetti squash into a comforting meal with sweet, caramelized onions.

Ingredients

  • 1 spaghetti squash
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil, and sprinkle with salt and pepper.
  3. Place the squash cut side down on a baking sheet. Roast in the oven for 30-40 minutes until tender.
  4. Heat the remaining olive oil in a skillet over medium heat. Add the sliced onions, seasoning with salt.
  5. Cook the onions slowly, stirring occasionally, until they are caramelized (about 20 minutes).
  6. Remove the squash from the oven and use a fork to scrape the flesh into strands.
  7. Toss the spaghetti squash strands with the caramelized onions. Serve warm with fresh herbs if desired.

Notes

Ensure to check the doneness of the squash; it should easily pull apart into strands. Caramelization of the onions takes time, don’t rush it.
