Warm up your kitchen with this hearty Chicken Quinoa Soup, combining tender chicken, wholesome vegetables, and nutty quinoa for a comforting meal.

Ingredients

  • 1 cup quinoa
  • 1 lb chicken breast, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
  2. Add the vegetables: Toss in the diced carrots and celery, stirring well. Cook for an additional 4-5 minutes until the vegetables start to soften.
  3. Cook the chicken: Add the diced chicken to the pot. Cook, stirring frequently, for about 5 minutes or until the chicken is no longer pink on the outside.
  4. Incorporate quinoa and broth: Stir in the quinoa, followed by the chicken broth, dried thyme, salt, and pepper. Bring the mixture to a boil.
  5. Simmer the soup: Reduce the heat to low and let it simmer uncovered for about 20 minutes, or until the quinoa is fully cooked and has absorbed the flavors.
  6. Adjust and serve: Taste the soup and adjust the seasoning as needed. Serve warm, and enjoy the comforting flavors!

Notes

You can substitute chicken breast with turkey or add other vegetables like spinach or bell peppers for added nutrition. Consider adding fresh herbs for a burst of freshness.
