A quick and flavorful dish combining lean ground beef, fresh cabbage, and shiitake mushrooms in a savory soy sauce marinade.

Ingredients

  • 1 lb Ground Beef (Lean ground turkey is a great substitute)
  • 4 cups Cabbage (Can use kale or bok choy)
  • 8 oz Shiitake Mushrooms (Button mushrooms work in a pinch)
  • 4 Scallions (Green Onions; regular onions can be used)
  • 3 tbsp Soy Sauce (Tamari is a gluten-free alternative)
  • 2 tbsp Sesame Oil (Vegetable oil can be used for allergies)
  • 3 cloves Garlic (Use fresh garlic for best taste)
  • 1 tbsp Ginger (Ground ginger can substitute fresh)

Instructions

  1. Prep your ingredients: Wash and chop the cabbage, slice the shiitake mushrooms, and mince the garlic and ginger. Set aside your ingredients for easy access.
  2. Cook the ground beef: In a large skillet or wok over medium-high heat, add the ground beef. Cook until browned and fully cooked through, about 5-7 minutes. Use a spatula to break it apart as it cooks.
  3. Add aromatics: Once the beef is cooked, add the minced garlic and ginger to the skillet. Stir and cook for an additional 1-2 minutes until fragrant.
  4. Incorporate the vegetables: Add the sliced mushrooms and chopped cabbage to the skillet. Pour in the soy sauce and sesame oil. Stir well to combine, ensuring that the vegetables coat with the sauce.
  5. Stir fry: Cook the mixture for about 5-8 minutes, stirring occasionally, until the cabbage is just tender but still crisp. Be careful not to overcook the vegetables to maintain their texture.
  6. Garnish and serve: Once the vegetables are cooked to your liking, remove the skillet from heat. Top with sliced scallions before serving. Enjoy your stir fry as is or over rice, noodles, or lettuce wraps.

Notes

For extra spice, consider adding red pepper flakes or a dash of chili sauce when you add the soy sauce. Adjust the soy sauce and sesame oil to your taste preference.
