A delightful dish featuring tender shredded chicken with zesty seasonings and colorful vegetables, perfect for busy weeknight meals.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes, undrained
  • 1 can green chilies, undrained
  • 1 cup chicken broth

Instructions

  1. Prepare the chicken: Place the chicken breasts directly into the Crock Pot.
  2. Mix the seasonings: In a bowl, combine the ranch dressing mix and taco seasoning. Sprinkle the mixture generously over the chicken breasts.
  3. Add vegetables and broth: Layer the black beans, corn, diced tomatoes, green chilies, and chicken broth over the seasoned chicken.
  4. Set to cook: Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  5. Shred the chicken: After cooking, shred the chicken inside the pot using two forks, then mix everything together for even flavor distribution.
  6. Serve warm: Serve the Fiesta Chicken warm with tortillas or rice for a hearty meal.

Notes

Don’t overload the Crock Pot; avoid overfilling for even cooking. Shred the chicken while hot for the best texture.
