A flavorful, melt-in-your-mouth chuck roast slow-cooked in a rich French onion soup-inspired broth.

Ingredients

  • 1 (4-5 pounds) chuck roast
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup dry white wine or red wine
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Sear the roast: Heat the olive oil in a skillet over medium heat. Season the chuck roast with salt and pepper, then sear it until browned on all sides.
  2. Prepare the onions and garlic: Place the thinly sliced onions and minced garlic in the bottom of your slow cooker.
  3. Add the roast: Place the seared roast on top of the onions in the slow cooker.
  4. Mix the cooking liquid: In a bowl, combine the beef broth, wine, Worcestershire sauce, and thyme. Pour this mixture over the roast and onions.
  5. Cook to perfection: Cover and cook on low for 8-10 hours or on high for 4-6 hours.
  6. Serve: Spoon the onion mixture over the meat and enjoy hot.

Notes

For added depth of flavor, don’t rush the searing process and use fresh herbs when possible.
