Ingredients
1 lb boneless, skinless chicken breasts
1 can sweet corn, drained
1 can black beans, drained and rinsed
1 can diced tomatoes with green chilies
1 onion, diced
2 cloves garlic, minced
1-2 cups chicken broth (adjust for thickness preference)
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
1 cup pepper jack cheese, shredded
Fresh cilantro for garnish
Instructions
Combine the chicken breasts, sweet corn, black beans, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper in a crockpot.
Mix well to ensure all ingredients are evenly distributed and coated.
Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
Shred the chicken using two forks and return it to the pot.
Add the pepper jack cheese and stir until it melts into the chili.
Serve the chili in bowls and garnish with fresh cilantro.
Notes
You can substitute the chicken with turkey or tofu for a different protein option. Use low-sodium broth if watching your salt intake.
