Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 teaspoon paprika (or smoked paprika)
  • Fresh chives or green onion, cut into small pieces
  • Optional: a few drops of yellow food coloring

Instructions

  1. Hard-Boil the eggs by placing them in a pot and covering with cold water. Bring to a boil over medium heat. Turn off heat, cover, and let sit for 10-12 minutes.
  2. Cool and peel the eggs by transferring them to an ice bath, cooling for about 5 minutes, then peeling under cold running water.
  3. Prepare the filling by slicing the eggs in half, removing yolks, and combining them with mayonnaise, Dijon mustard, salt, and pepper in a mixing bowl.
  4. Shape the mixture into pumpkins by filling the egg whites and creating ridges with a fork.
  5. Add the finishing touches by sprinkling paprika and inserting chives as stems.
  6. Serve and enjoy your fall-inspired treat!

Notes

Cool eggs quickly after boiling for best peeling results. Taste the filling and adjust seasonings as needed.
