Ingredients
1 cup gluten-free 1:1 flour (like King Arthur’s)
1 teaspoon baking powder
½ teaspoon kosher salt
1 cup plain Greek yogurt
2 tablespoons Everything bagel seasoning
Olive oil spray (for coating)
Egg white or water (for coating the bagels if preferred)
Instructions
Prepare the Dough: In a medium-sized bowl, combine the gluten-free flour, baking powder, and salt. Mix the dry ingredients well. Then add the Greek yogurt and stir with a fork until a thick, chunky dough forms.
Knead the Dough: Sprinkle flour on your hands and the dough. Knead the dough in the bowl until it becomes a smooth ball. This should take about 1 minute.
Form the Bagels: Turn the dough out onto a well-floured surface. Knead it for another minute, then scoop out heaping tablespoons (about 1 ounce) of dough. Roll each piece into a ball and place it on a clean plate. Repeat until all the dough is rolled into balls. You should have around 12-13 mini bagels.
Preheat the Air Fryer: Set your air fryer to 350°F (175°C) to preheat.
Coat the Bagels: While the air fryer is preheating, spray or lightly brush the bagel balls with olive oil spray. Roll each dough ball in the Everything bagel seasoning or sprinkle it on top for a lighter touch.
Cook the Bagels: Spray the air fryer basket with olive oil spray. Place the bagels in the basket in a single layer, giving them about an inch of space between each. Cook the mini bagels for 10-12 minutes. After the first 10 minutes, check one by pulling it apart; if it’s still doughy inside, return it for another 1-2 minutes.
Cool and Serve: Once cooked, remove the bagels from the air fryer and place them on a plate. Let them cool for about 5 minutes before serving. Enjoy with butter or cream cheese!
Notes
Ensure proper kneading for best texture and monitor cooking time to avoid overcooking.
