These fluffy, pumpkin-spiced pancakes are perfect for a festive breakfast, combining warm spices and whimsical jack-o-lantern shapes.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup pumpkin puree (canned or fresh)
  • 1 cup buttermilk (or regular milk with vinegar)
  • 2 large eggs
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • Chocolate chips or raisins for eyes
  • Whipped cream for mouth
  • Maple syrup for serving

Instructions

  1. Mix dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. Combine wet ingredients in another bowl: pumpkin puree, buttermilk, eggs, melted butter, and vanilla extract.
  3. Combine the wet and dry mixtures, stirring gently until just combined; the batter should be slightly lumpy.
  4. Preheat a non-stick skillet or griddle over medium heat, lightly greasing it with oil.
  5. Cook pancakes by pouring ¼ cup of batter onto the skillet for each pancake, cooking for 2 to 3 minutes until bubbles form.
  6. Flip pancakes once edges look set, cooking for another 1 to 2 minutes until golden brown.
  7. Decorate with chocolate chips or raisins for eyes and whipped cream for a mouth, serving warm with maple syrup.

Notes

Do not overmix the batter to maintain fluffiness. Use real pumpkin puree for best flavor.
