Ingredients

  • 1 pound ground chicken
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 8 oz light cream cheese
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro (optional)
  • Avocado (optional)
  • Lime wedges (optional)

Instructions

  1. Brown the chicken: In a large pot, cook the ground chicken over medium heat until browned, about 5-7 minutes.
  2. Sauté aromatics: Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 4-5 minutes.
  3. Combine ingredients: Stir in the chicken broth, white beans, cumin, chili powder, and season with salt and pepper.
  4. Simmer the chili: Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Add creaminess: Stir in the light cream cheese until melted and well combined.
  6. Serve and enjoy: Ladle the chili into bowls and top with your choice of chopped cilantro, avocado, or lime wedges.

Notes

For added flavor, don’t rush the browning process and rinse the beans before adding them.
