A convenient and nutritious meal plan designed to help with fat loss while ensuring high protein intake, perfect for meal prepping for the week.

Ingredients

  • Skinless chicken breast (4 pieces)
  • Ground turkey (1 pound)
  • Canned chickpeas (2 cans)
  • Broccoli (2 cups, chopped)
  • Bell peppers (2 medium, diced)
  • Spinach (2 cups, fresh)
  • Quinoa (1 cup, dry)
  • Brown rice (1 cup, dry)
  • Black beans (1 can)
  • Olive oil (3 tablespoons)
  • Garlic powder
  • Cumin
  • Paprika
  • Salt
  • Avocado (1, for serving)
  • Greek yogurt (1 cup, for topping)

Instructions

  1. Cook the Grains: Rinse the quinoa and brown rice separately under cold water. In two saucepans, add 2 cups of water to each and bring to a boil. Add quinoa in one pan and brown rice in the other. Reduce heat, cover, and simmer for 15 minutes for quinoa and 40-45 minutes for brown rice. Fluff with a fork when done.
  2. Prep the Proteins: While the grains cook, season the chicken with salt, garlic powder, and paprika. In a large skillet over medium heat, add 1 tablespoon of olive oil. Cook chicken for about 6-7 minutes per side until fully cooked. Remove it from the pan and let it rest before slicing.
  3. Cook the Ground Turkey: In the same skillet, add another tablespoon of olive oil if needed. Brown the ground turkey with cumin and salt, breaking it up as it cooks. This should take about 8-10 minutes.
  4. Prepare the Vegetables: In a pot, bring some water to a boil. Steam the broccoli and diced bell peppers for about 5-7 minutes until crisp-tender. Add spinach towards the end and let it wilt.
  5. Combine and Split: In containers, place a portion of grains, then add a serving of proteins (sliced chicken, cooked turkey, and chickpeas) and top with the veggies. Add a dollop of Greek yogurt on the side if desired.
  6. Cool and Store: Allow the meals to cool completely before sealing them. Store in the refrigerator for up to five days.
