A delicious low-carb dish that combines the comforting flavors of a cheeseburger with creamy macaroni and cheese using cauliflower instead of pasta.

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 pound ground beef (or turkey)
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1 cup beef broth
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • ½ cup diced pickles (optional)
  • ½ cup diced tomatoes (optional)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the cauliflower: In a large pot, bring water to a boil. Add the cauliflower florets and cook until tender, about 5-7 minutes. Drain and set aside.
  3. Brown the meat: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  4. Add seasonings: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld.
  5. Make the cheese sauce: In a separate bowl, combine the cream cheese and beef broth. Whisk until smooth. Stir in the shredded cheddar cheese until melted and well combined.
  6. Combine the cooked cauliflower and the beef mixture in a large mixing bowl. Pour the cheese sauce over the top and mix until everything is well coated.
  7. Transfer the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  8. Bake for 15-20 minutes or until heated through and slightly bubbly.
  9. Add toppings: If desired, top with diced pickles and tomatoes before serving.
  10. Garnish with fresh parsley if desired before serving.

Notes

Ensure cauliflower is tender but not mushy. Adjust seasonings to taste and don’t rush the cheese sauce.
