A quick and flavorful Korean Beef Rice Bowl that’s perfect for busy weeknights, featuring ground beef, veggies, and rice.

Ingredients

  • 1 lb ground beef
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli)
  • 2 teaspoons sesame oil
  • Green onions, for garnish

Instructions

  1. Heat the pan: In a skillet, heat 2 teaspoons of sesame oil over medium heat until shimmering.
  2. Brown the beef: Add the ground beef into the hot skillet. Cook, breaking it apart with a wooden spoon, until it is browned and no longer pink.
  3. Add aromatics: Stir in the minced garlic and grated ginger. Cook for another minute, allowing the aromatics to become fragrant.
  4. Create the sauce: Mix in the soy sauce and brown sugar, and let it simmer on low heat for a few minutes until everything is well combined and slightly thickened.
  5. Prepare the rice and vegetables: Serve the beef mixture hot over cooked rice, and top it with the mixed vegetables.
  6. Garnish and serve: Sprinkle with sliced green onions for garnish. Enjoy your nourishing meal!

Notes

For a leaner option, swap ground beef for ground turkey or chicken. Add more vegetables or use low-sodium soy sauce for enhanced flavor.
