Korean Marinated Eggs, or Mayak Gyeran, are deliciously addictive eggs infused with umami flavors from a savory marinade. Ideal as a side dish or snack.

Ingredients

  • 12 Eggs
  • 2 tsp Salt
  • 2 tbsp Vinegar
  • 6 cloves Garlic (minced)
  • 2 Korean Green Peppers (chopped)
  • 1 Red Chili (chopped & optional)
  • 3 Green Onions (chopped & optional)
  • 1 tbsp Sesame Seeds
  • 1 cup Soy Sauce
  • ½ cup Honey
  • 1 tbsp Sesame Oil (optional)
  • ½ cup Water

Instructions

  1. Prepare the Eggs: In a pot, add enough water to cover all the eggs completely. Stir in the salt and vinegar. Turn the heat to medium-high and bring the water to a simmer.
  2. Cook the Eggs: Once the water is boiling, carefully add the eggs. Allow them to cook for exactly 6 minutes for a perfectly soft-centered egg.
  3. Ice Bath: After 6 minutes, immediately transfer the eggs to a bowl filled with ice water. Let them rest in the ice water for at least 10 minutes to halt the cooking process.
  4. Peel the Eggs: Carefully peel the eggs and set them aside. It’s easier if you tap them gently on a hard surface to crack the shell before peeling.
  5. Make the Marinade: In a container, combine the minced garlic, chopped green peppers, red chili, green onions, soy sauce, honey, sesame oil, and water. Mix everything thoroughly until well combined.
  6. Marinate the Eggs: Add the peeled eggs into the marinade, ensuring they are fully submerged. Allow the eggs to rest in the fridge for at least 2 hours, but overnight is preferred for maximum flavor absorption.
  7. Serve: When ready to serve, enjoy the marinated eggs alongside a bowl of hot rice for a comforting meal.
