A comforting twist on a classic favorite, this Italian Meatball Soup combines tender meatballs with fresh vegetables in a hearty broth, perfect for family dinners.

Ingredients

  • 1 pound ground beef (or turkey)
  • 1/2 cup breadcrumbs (or almond flour for a low-carb option)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef or chicken broth
  • 2 cups spinach or kale
  • 1 teaspoon dried Italian herbs
  • 1 can diced tomatoes (optional)

Instructions

  1. Prepare the meatballs by mixing ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper in a bowl. Form this mixture into small meatballs.
  2. Sauté the diced onion, carrots, and celery in olive oil over medium heat until softened, about 5-7 minutes.
  3. Brown the meatballs in the pot for about 5 minutes until browned on all sides.
  4. Add the beef or chicken broth and bring the mixture to a simmer.
  5. Stir in the spinach (or kale), dried Italian herbs, and diced tomatoes if using. Let it simmer for 20-30 minutes until the meatballs are cooked through.
  6. Serve hot, optionally garnished with grated Parmesan cheese or fresh herbs.

Notes

For extra flavor, serve the soup with crusty bread or garlic bread. Customize with vegetables based on preference.
