Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup butter (softened)
  • ¼ cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • 2 large apples (chopped finely)
  • 2 tablespoons brown sugar (for apple topping)
  • 1 tablespoon butter (for apple topping)
  • ½ teaspoon vanilla extract (for apple topping)
  • ½ teaspoon cinnamon (for apple topping)
  • 2 tablespoons butter (for maple glaze)
  • ¼ cup pure maple syrup
  • ½ cup powdered sugar
  • ¼ teaspoon vanilla extract (for maple glaze)
  • ⅛ teaspoon ground cinnamon (for maple glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 11×7-inch pan with tin foil, or spray the pan with a non-stick cooking spray to prevent sticking.
  2. In a small saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped apples, 2 tablespoons of brown sugar, ½ teaspoon of vanilla extract, and ½ teaspoon of cinnamon. Cook for about 5 minutes, stirring until the apples soften. Remove from heat and set aside.
  3. In a bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt. Set aside.
  4. In a large mixing bowl, beat 1 cup of softened butter with ¼ cup of sugar and 1 cup of dark brown sugar until light and fluffy. This should take about 3-5 minutes.
  5. Add 2 large eggs one at a time, mixing well after each addition. Stir in 1½ teaspoons of vanilla extract.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Avoid overmixing.
  7. Gently fold the prepared apple filling into the batter. Make sure the apples are evenly distributed.
  8. Pour the blondie batter into the prepared pan and spread it evenly.
  9. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. Let them cool in the pan.
  10. In a small saucepan, melt 2 tablespoons of butter over low heat. Stir in ¼ cup of pure maple syrup, ½ cup of powdered sugar, ¼ teaspoon of vanilla extract, and ⅛ teaspoon of ground cinnamon until smooth.
  11. Once the blondies are cool, drizzle the maple glaze over the top. Allow it to set for about 10 minutes before cutting into squares.

Notes

Use fresh, tart apples like Granny Smith for best flavor. These blondies are perfect for making ahead of time and can be enjoyed warm or at room temperature.
