A delightful dish that balances bright flavors with comforting textures, featuring tender salmon with zesty lemon orzo.

Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper. Place fillets in the skillet and sear for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
  2. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  3. Stir in orzo pasta and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes until orzo is tender.
  4. Incorporate lemon zest, lemon juice, and spinach into the cooked orzo. Cook for an additional 2-3 minutes until spinach wilts.
  5. Return cooked salmon to the skillet to warm through for about a minute.
  6. Serve hot, garnished with fresh parsley.

Notes

Monitor cooking times to avoid overcooking the salmon. Fresh ingredients enhance the flavors.
