A wonderfully satisfying dish that combines fresh veggies, hearty sausage, and creamy cheese, offering a nutritious twist on comfort food.

Ingredients

  • 1 medium Spaghetti Squash
  • 1 pound Spicy Italian Sausage
  • 2 cups Broccoli, chopped
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking dish and roast for about 40 minutes.
  2. Add olive oil to a large skillet over medium heat. Once hot, add the spicy Italian sausage and cook for 6-8 minutes until browned.
  3. Stir in the chopped broccoli and minced garlic, cooking for an additional 4-5 minutes until the broccoli is tender. Season with salt, pepper, and red pepper flakes if using.
  4. Remove from heat and stir in half of the shredded cheddar cheese until melted.
  5. Shred the roasted spaghetti squash using a fork to create strands. Mix the squash strands with the sausage and broccoli filling and distribute back into the squash shells.
  6. Sprinkle the remaining cheddar cheese on top and return to the oven, baking for another 10-15 minutes until cheese is bubbly and golden.

Notes

Choose firm spaghetti squash and avoid overcooking the sausage. Let the filled squash rest before serving to help the filling set.
