A comforting noodle soup with a creamy coconut milk broth and vibrant flavors of Thai cuisine.

Ingredients

  • 4 cups chicken or vegetable broth
  • Ramen noodles (packaged quantity as per serving)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons chili paste or sauce (adjust to taste)
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Sliced green onions for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the broth: In a large pot, combine the broth, fish sauce, soy sauce, brown sugar, and chili paste. Bring to a boil over medium-high heat.
  2. Cook the noodles: Add ramen noodles to the pot and cook according to package instructions, usually around 3-4 minutes, until tender.
  3. Finish with lime: Stir in the fresh lime juice, adjusting more to taste depending on your preference for acidity.
  4. Serve and garnish: Ladle the soup into bowls, garnishing with fresh cilantro and sliced green onions. Serve hot with lime wedges on the side for an extra zing.

Notes

Adjust seasoning as you cook, especially lime juice and chili paste, to suit your taste. Use fresh ingredients for best flavor and consider adding coconut milk for extra creaminess.
